Here at Crate a Party, we love cake! Well, who doesn't? So with Easter just around the corner we thought we'd try out Waitrose's Easter Lemon and Pistachio cake. We asked our foodie Queen and cake connoisseur, Josephine Rose to have a go at making it and here is what she thought:
On the outside this cake looks like your average sponge - but don’t lose interest too soon! Buried within each layer of lemony sponge is a lovely pistachio marzipan surprise. Coupled with the lemon buttercream filling, this cake is deliciously "moist" (sorry!).
One thing I would say about the recipe is that it suggests throwing all the cake ingredients in to a food processor and blitzing. Because of this, it also calls for baking powder. I myself have always preferred the slightly more long winded approach of mixing butter + sugar, + eggs, + flour. This way you can leave out the baking powder, which I always think is an unnecessary addition when you’re using self-raising flour. Call me old fashioned...
Tasters’ verdicts – “One of the most delicious cakes I’ve ever had”...”deliciously different”...”fresh”
My verdict – Very straightforward. Looks good. Tastes good. I wouldn't limit this to the Easter repertoire.
